Hannah comes to WellnessIQ with 9 years of experience in the healthcare industry. Hannah attended The University of Akron, where she obtained her degree in Healthcare Office Management. Throughout college, Hannah worked as a medical assistant/phlebotomy technician in emergency medicine with pediatrics. Upon completion of college, Hannah transitioned over to an administrative role where she worked as an assistant in a multi-specialty medicine group with physicians, care teams and patients. This role assisted her in preparation for her new role with WellnessIQ!

Off the Clock

Off the clock, Hannah loves to spend time in local parks, canal towpaths or walking trails with her goldendoodle, Truffles. Hannah also enjoys spending time with her family and friends. During the summer months you can also find Hannah visiting local coffee shops and wineries.

Honey Garlic Chicken with Broccoli

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup honey
  • 2 tablespoons tomato paste
  • 2 teaspoons chili paste (or hot sauce of choice)
  • 4 cloves garlic minced
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch
  • 2 heads of broccoli

 

Instructions

  1. Place the chicken in the bottom of a 6-quart or larger slow cooker.
  2. In a medium mixing bowl or very large measuring cup, whisk together the soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour over the chicken.
  3. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken reaches an internal temperature of 165 degrees F on an instant-read thermometer.
  4. Remove the chicken to a plate and let cool slightly.
  5. Whisk the cornstarch into the slow cooker cooking liquid.
  6. Cover and cook on HIGH for 15 minutes, until the sauce thickens slightly, stirring occasionally.
  7. With two forks, shred the chicken and place it in the slow cooker.
  8. Stir to coat the chicken with the sauce.
  9. Serve over rice, sprinkled with green onions and sesame seeds
